Step 1
Preheat the oven to 200°. In a big skillet with a lid, soften 3 tbsp. butter over medium warmth. Add the shallots and prepare dinner, stirring typically, till softened, 3 to 4 minutes; season with salt and pepper. Add the inexperienced beans and toss to coat for a minute or 2, then add the inventory. Cowl and braise the beans till smooth, 12 to fifteen minutes extra.

Season the meat and arrange a breading station: Place the flour and sage in a shallow dish; season. In one other shallow dish, beat 3 eggs and the mustard. In a 3rd shallow dish, season the breadcrumbs with salt, pepper and the nutmeg. Working in batches, coat the steak within the flour combination, then the egg combination, after which the breadcrumb combination, urgent to stick.

In a big skillet, warmth 2 tbsp. oil, two turns of the pan, and 1 tbsp. butter over medium-high. Add 2 cutlets and prepare dinner till browned and crispy, about 4 minutes per facet. Place on a wire rack set inside a baking sheet; switch to the oven to maintain heat. Repeat with 2 extra tbsp. oil, 1 tbsp. butter and the remaining cutlets. Wipe out the skillet; add the remaining 1 tbsp. butter and soften over medium-low warmth. Crack within the remaining 4 eggs; prepare dinner till the whites are simply set, about 3 minutes. Flip the eggs and prepare dinner till over straightforward, about 1 extra minute.

To serve, divide the cutlets amongst plates. Squeeze the halved lemon over the cutlets. Prime every cutlet with some capers, an over-easy egg and a couple of anchovy fillets, crossed to type an X. Serve the inexperienced beans alongside.
